1 tsp Red Pepper (for medium, more if you want spicier)
1 meduim Chopped Onion
1 tsp Paprika
½ tsp ground Celery Seed
Mix all and simmer for a while, at least until you can't stand to just smell the wonderful aroma any longer, ya gotta eat it. I use this sauce with smoked pork shoulder.

Dandy Man's Teriyaki Steak Rollups:
3 Flank Steaks
24 Oz Kikkoman Teriyaki Sauce
Marinate flank steaks overnight. Broil on very high heat. Leave pink in the middle. Refridgerate until cold. Slice very thin across the grain to have slices about 1" across and 4-5" long. Roll up and fasten with toothpick. Arrange on a tray with chickory garnish and Teriyaki dipping sauce. Serves about 12 hefty appetites or more. You can serve it hot or cold.

Janet's Spinach Dip
1 pkg. frozen chopped spinach 2 c. mayonaise
1/4 c. finely chopped onions several drops Texas Pete
1 bottle freeze-dried chives
Cook spinach and drain well (very well). Add all other indredients to spinach and mix well. Best if made the night before. Serve with favorite crackers or veggies.

Alisha's Tailgate Hamburger Dip
1 lb. ground beef
1 medium onion, chopped
2 taco seasoning packets
1 cup water
16 oz. sour cream
2-4 cups shredded cheese
(optional) add hot peppers for spice
Brown hamburger, drain and transfer into baking dish. Add onion, taco packets, water, sour cream and 1/2 of the cheese. Bake at 350 for 30-45 minutes. Transfer into crock pot and add remaining cheese. Dip tortilla chips and enjoy!

White BBQ Sauce
1 1/2 C. Mayo, 1/4 C. white wine vinegar, 1 Tbl. coarsely ground pepper, 1 Tbl. Creole mustard, 1 Tsp. salt, 2 minced garlic cloves, 2 Tsp. prepared horseradish. Whisk all until well blended. Store in Refrig. Great with hot wings, fried chicken, beef, etc.

1 cup Mayonaise

1 packet (1 1/4oz) dry taco seasoning mix
4 cups Corn Chex cereal
4 cups Wheat Chex cereal
1 cup Beer Nuts
1 cup beef jerky, sliced
1 16 oz pack Finely Shredded Hot Peppered or Mozzarella Cheese.

7-Layer Tex-Mex
Get one of those disposable square lasagna pans from the store
spread a layer of refried beans on the bottom of the pan
on top of the beans spread a layer of taco meat that has been browned and seasoned with a package of taco seasoning
spread a layer of shredded cheese (I think the Mexican blend you buy at the store is best)
Bake the dish as is for 20 minutes at 350 - this step is optional and many people do not do it since the cheese will melt and then harden as time passes. As long as you brown the meat thoroughly everything else can be served cold and it tastes good. The pre-made stuff from the grocery store is always cold
After you bake it (or just skip to this step if you don't bake it) spread a layer of guacamole on top of the cheese layer
Spread a layer of sour cream on top of the guacamole.
Sprinkle on another layer of cheese.
Sprinkle tomatoes (diced finely) over the top of the dish.
The seventh layer is adding some diced olives to the tomato layer. [Michael's note: I don't do this, but some people like it.]
[Michael's note: We take this to tailgates in Texas all the time and it holds up to the heat. Obviously it is best to keep it on the top of a cooler or otherwise refrigerate the dish until you are ready to put it out.]

Into a food processor or blender put:
1 can of whole tomatoes (28oz) - make sure it's just plain whole tomatoes – no basil or Italian spices added
Juice of 2 limes
1/2 of a purple onion chopped
1 clove of garlic chopped
1/2 bunch of cilantro chopped
1 jalapeno pepper seeded and chopped
1 serrano pepper seeded and chopped (juggle peppers however you like – more or less)
